Spinach German Style*
1/2 peck spinach
1 tsp salt
1 tsp sugar
4 slices bacon
1/4 cp mild vinegar
1 - Remove the wilted leaves and cut the roots from the spinach.
2 - Wash 3 times in water containing a little salt, finishing with tepid water
to remove any remaining grit.
3 - Place in a kettle; add the salt and sugar; cover and cook in its own juice
until tender, from 15 to 20 minutes.
4 - Drain, reserving the liquor for soup stock and chop the spinach.
5 - In the meaqntime fry the bacon until crisp; remove it from the fat; and stir in the vinegar.
6 - Add the spinach and reheat.
7 - Serve garnished with the bacon.
