Mashed Summer Squash
2 medium-sized summer squashes
2 tbsp butter
1 tsp salt
1 tsp sugar
1/4 tsp pepper
1 tbsp flour
1/2 cp top cream
1 - Remove the rind from the squashes; slice; and remove the seeds if the squashes seem old and tough.
2 - Cover with boiling water containing the salt and sugar.
3 - Boil until tender, about 30 minutes; Drain; mash; add the pepper; butter and flour stirred until smooth;
4 - Gradually stir in the top-cream, allowing the squash to reheat.
