Vegetable Chop Suey
1/2 lb fresh mushrooms
2 tbsp butter
2 tbsp flour
1 cp water
1 tsp salt
1/8 tsp pepper
2 small carrots
1 small potato
1 lb fresh asparagus
1/2 lb string beans
1 stalk celery
1 lb fresh peas
1 - Peel and chop the onion; and wash and slice the mushrooms.
2 - Pan fry these 2 vegetables in the butter for 3 minutes.
3 - Add the flour and when cool, the water. Cook and stir until boiling.
4 - Add the salt and pepper.
5 - Wash and prepare the other vegetables, shredding the carrots and potato,
cutting the asparagus in 1" pieces, shredding the string beans, and dicing the celery. 6 - Place in layers in a casserole; sprinkle with a little salt and pepper between the layers.
7 - Pour over the mushroom gravy; cover; and bake 1 hr in a moderate oven, 350 degrees F.
8 - Serve with boiled rice with or without soy sauce.
