Spinach and Tomato Salad
6 little mounds cooked spinach
6 good-sized slices tomato.
1 - Chop the cooked spinach fine; season and fill small timbale moulds.
2 - Pour a little French dressing over the tomato; and chill.
3 - To serve, put a slice of tomato on each plate. Turn one of the spinach moulds on it.
4 - Garnish with lettuce or cress and the mayonnaise.
