Cress, English Style
1 good-sized bunch of watercress
1 egg yolk
1/3 tsp salt
1/8 tsp paprika
1 1/2 tbsp vinegar
4 tbsp olive oil
1 chopped hard-cooked egg
1 - Wash and crisp the cress. Stir the seasonings with the egg yolk.
2 - Add the oil and vinegar to make a thin dressing.
3 - Add the hard cooked egg, chopped.
4 - Arrange the cress in little 'bouquets' individually and pour the dressing over.
