Potato Loaf Salad
3 cps thinly sliced warm boiled potato
2 hard-cooked eggs
1 medium sized onion, grated
1 cp diced celery (optional)
1 1/4 tsp salt
1/4 tsp pepper
1/3 cp French dressing
1 - Chop the eggs; and mix with the potato, celery, onion, and seasonings.
2 - Then pour over the French dressing.
3 - Pack into a bread pan rubbed with a little French dressing; and let
stand to become cold and firm.
4 - Unmould; and garnish with mayonnaise and lettuce, radish roses, scallions, or celery curls
5 - On top of the salad put a design of sweet pickles.
