Golden Glow Ring Salad
1 pkg prepared lime gelatin
1 small can shredded pineapple
1 tbsp vinegar
a few grains salt
3/4 cp grated raw carrot
1/3 cp finely chopped celery
1 - Dissolve the gelatin in 1 cp boiling water.
2 - Drain the pineapple and reserve the juice.
3 - Add the vinegar to the pineapple juice, and add enough cold water to make 1 cup.
4 - Add to the gelatin and set aside to cool.
5 - When the gelatin starts to thicken stir in the remaining ingredients.
6 - Transfer to individual ring moulds rinsed with cold water.
7 - Chill in the refrigerator until firm; unmould in nests of lettuce; and
fill the centers of the rings with mayonnaise.
8 - Garnish with sprigs of parsley or cress; and serve.
