Frozen Summer Fruit Mayonnaise
1 tsp gelatin
1 cp mayonnaise
1 cp diced chipped canned pineapple
3/4 cp halved, stoned, sweet cherries
3/4 cp shredded plums
3/4 cp chopped pecans
hearts of lettuce
sprigs of mint
1 - Soften the gelatin in any fruit juice to cover for 5 minutes; then melt over steam
and add to the mayonnaise, mixed. 2 - Stir in the fruits and nuts; transfer to an ice cream freezer.
3 - Pack in equal parts of ice and salt and chill 2 hrs or freeze in a mechanical refrigerator.
4 - Servem garnished with the lettuce hearts and mint.
