Lemon Sponge Pie
1 - Beat together the flour, butter, sugar, egg yolks, salt and lemon rind and juice.
2 - Add the milk; fold in the egg whites, whipped stiff.
3 - Pour into a deep pie plate lined with the crust rolled to 1/8" thickness.
4 - Bake 10 minutes in a hot oven, 425 degrees F.; tyhen reduce the heat to 375 degrees F.
and continue baking for 30 minute.
