Cocoanut Caramel Pie
1 - Line the pie plate with the crust; and crimp the edges with the fingers.
2 - Next, make the filling. To do this, beat the eggs light with 2/3 cp sugar,
the vanilla and salt.
3 - Melt the 1/4 cp sugar in a heavy frying pan; and add the boiling water.
4 - When the caramel has melted, pour in the milk; heat and add to the egg mixture.
5 - Transfer to the crust-lined plate; and place in a hot oven, 400 degrees F. for
10 minutes to set the crust; then reduce the heat to 375 degrees F.. 6 - Continue cooking until a knife inserted in the center comes out clean.
7 - Then sprinkle the shredded cocoanut over the top of the pie and return it
to the oven for a moment or two to toast it.
