Fig Mirengue Pie
1 - Stir the sugar, flour, lemon juice and rind into the figs.
2 - Beat the egg yolks light; combine; and pour into a plate lined with the pastry.
3 - Bake in a hot oven, 375 degrees F. until firm in the center, about 30 minutes.
4 - Cover with a meringue made by beating egg whites stiff with 3 tbsp powdered sugar;
and finish baking in a slow oven, allowing 12 minutes.
