Lemon Puff Pie
1 - Line a pie plate with the pastry, building up the edges.
2 - Stir together the cornstarch, sugar, egg yolks, salt, lemon juice, rind, and butter.
3 - Add 1/4 cp cold water. When well blended, add to the boiling wqter, stirring constantly.
4 - Beat the egg whites stiff. Stir this custard mixture into them.
5 - Transfer to the crust-lined plate; and bake until puffy, brown and firm in the center in
a hot oven, 400 degrees F. moderating the heat if necessary. Allow about 35 minutes.
