Spring Mince Pie
1 - Roll out the pastry; and line a shallow pie plate.
2 - Dust with bread crumbs; pour in the spring mince filling; and moisten the edges of the crust.
3 - Fit over the top crust, loosely pressing the edges together with the tines of a fork.
4 - Slash the top crust to allow steam to escape; and place in a hot oven, 400 degrees F. to bake.
5 - When beginning to brown, reduce the heat. Allow 30 minutes.
