Grape Pie Parisian
3 cps Concord grapes
3/4 cp sugar
1 tbsp flour
Rind 1/4 lemon
1/8 tsp cinnamon
1 - Remove the skins and seeds from the grapes. Steam the pulp for 20 minutes in the top of
a double boiler.
2 - a double boiler; and rub through a sieve.
3 - Combine this pulp with the skins, the sugar, flour, the egg, well beaten the lemon and the cinnamon.
4 - Transfer to a pie plate lined with the pastry; cover the top, lattice fashion, with narrow strips of dough
pressing the edges down securely.
5 - Put in a hot oven, 400 degrees F.; and bake for 10 minutes.
6 - Then moderate the heat to 375 degrees F.; and bake 25 minutes longer.
