Lemon Float Pie
5 tbsp cornstarch
1 1/2 cps boiling water
1 1/3 cps sugar
1 tbsp butter
juice 2 1/2 lemonsw
grated rind 1/2 lemon
1/4 tsp salt
1 - Blend the cornstarch with 1/4 cp cold water; and stir into the boiling water
2 - Cook rapidly, stirring constantly, until the mixture thickens.
3 - Then add the salt, sugar, butter, lemon juice and rind and the egg yolks, mixed
together; then set aside to cool until tepid.
4 - In the meantime, prepare the crust; and line the pie plate with it.
5 - Pour the cooled filling into this; place the pie in a hot oven, 375 degrees F.
and bake until the crust is pale brown, about 25 minutes.
6 - Then dot with tablespoonfuls of meringue made from the remaining egg whites, and
3 tbsp of powdered sugar.
7 - Reduce the heat; and return the pie to the oven to bake 10 minutes longer.
