Virginia Sweet Potato Pie
4 medium-sized sweet potatoes
1/4 cp butter
a few grains salt
1/2 cp sugar
juice and grated rind of 1 lemon
1/4 tsp cinnamon
1 cp milk
1 - Peel and boil the potatoes; and put through a potato ricer.
2 - Creaqm the butter, salt, sugar; add the egg yolks, lemon rind, cinnamon, potato pulp, and milk.
3 - Fold in the egg whites, beaten stiff; and transfer to a pie plate lined with the pastry.
4 - Place in a hot oven, 400 degrees F. for 10 minutes; then reduce then heat to 375 degrees F.;
and cook until the pie is firm in the center.
