Short Chopped Pastry
1 tsp baking powder
2 cps flour
1 tsp sugar
1/4 tsp salt
1 cp shortening
juice 1/2 lemon
5 tbsp cold water
1 - Sift the baking powder, flour, sugar and salt.
2 - Add the shortening; and chop into the flour mixture with a chopping knife.
3 - When well blended, add the egg, beaten, the lemon juice and water; and gradually
mix, chopping, not stirring.
4 - Roll into a long strip; fold in threes, by bringing one end over the middle and lapping the other end over.
5 - Chill for 10 minutes. This is particularly good for fruit tarts and pies.
