Deep Dish Rhubarb Pie
3 cps washed diced fresh rhubarb
2 cps sugar
a few grains salt
1/2 cp fine dry cracker crumbs or crushed cereal flakes
1 - Combine the rhubarb, sugar, salt, and cracker crumbs; and arrange in an
oiled shallow baking dish or casserole 2 - Roll out the pastry to 1/8" thickness; wet the edges of the baking dish
so the crust will stick; and cover the rhubarb with the pastry.
3 - Cut the pastry to fit the dish; and crimp the edges with the fingers.
4 - Slash the center to allow steam to escape; and bake in a hot oven, 375 - 400 degrees F. for 35 minutes.
5 - Serve while still warm.
