Deep Dish Berry Pie
3cps washed berries, any kind
1 cp sugar
few grains salt
1/4 tsp nutmeg
2 tbsp quick cooking tapioca
1 - Combine the berries, sugar, salt, nutmeg and tapioca; and transfer to anoiled shallow baking dish.
2 - Roll out the pie pastry to 1/8" in thickness; wet the edges of the baking dish so the crust will adhere.
3 - Cover the berries with the crust.
4 - Cut the crust to fit the dish; crimp the edges with the fingers; slash the center to allow the steam to escape.
5 - Bake in a hot oven, 400 degrees F. for 35 minutes.
6 - Serve while still warm plain or with cream or hard sauce.
