Cream Puffs with Orange Cream Filling
1/4 cp shortening
1/2 cp boiling water
1/2 cp flour
cooked cream filling
1 - Combine the swhortening and boiling water; and boil until the shortening is melted.
2 - Add the flour; and beat until the mixture is smooth and thick and leaves the side of the pan.
3 - Add the eggs, unbeaten, one at a time. Beat the mixture thoroughly after the addition of each egg.
4 - The mixture should be a thick heavy dough.
5 - AQrrange in an oiled cookie sheet or shallow pan small rounds of the dough, placing them at least 3" apart.
6 - Bake in a moderate oven, 350 degrees . for 40 minutes, or until the cream puffs are "puffed up" and brown all over.
7 - Remove from the pans; and cool.
8 - Cut open just enough to fill with the cooked cream filling. Dust with confectioner's sugar and serve very cold 9 - To make the cooked cream filling follow the recipe for cooked cream filling given elsewhere, flavoring with orange extract.
