Sponge Jelly Cakes
1 cp sugar
1 tsp lemon or orange extract
1/2 cp potato flour
1/2 tsp baking powder
1/8 tsp salt
jelly or jam
1 - Separate the eggs. Beat the shites stiff; and add the sugar and extract.
2 - Fold in the flour sifted with the baking powder and salt.
3 - Beat the yolks light and fold them in.
4 - Turn into oiled muffin pans; and bake in a slow oven, 350 degrees F. about 25 minutes.
5 - Cool, and carefully cut out the centers; and fill with jelly or jam.
6 - Replace the tops, cutting them in two and sticking up on ends.
7 - Dust with powdered sugar.
