White Nut Cake
1/4 cp shortening
2/3 cp sugar
1 1/2 cps cake flour
1 1/2 tsp baking powder
1/4 tsp salt
1/2 cp chopped nuts (any kind except peanuts)
1/2 cp milk
2 egg whites
1/2 tsp vanilla
1 - Cream the shortening; and gradually work in the sugar.
2 - Sift the dry ingredients, stir in the nuts; and add alternately with the milk to the first mixture.
3 - Fold in the egg whites, whipped stiff, and transfer to a well oiled and floured square cake pan.
4 - Sprimnkle with a few extra chopped nuts, if convenient.
5 - Bake in a moderate oven, 350 degrees F. for 40 minutes or until firm in the center and brown on top.
6 - Remove from the pan; dust with confectioners' sugar; and cut in small squares.
