Lady Roosevelt Cake
3/4 cp shortening
2 cps sugar
3 cps flour
3 tsp baking powder
1/4 tsp salt
1/4 tsp nutmeg
1 1/2 cps nut meats, any kind
1 cp raisins
1 cp milk
grated rind 1 orange
1/4 tsp lemon extract<
1/4 tsp orange extract
1 - Cream the shortening; and gradually work in the sugar.
2 - Add the eggs, one at a time; and beat until the mixture is thoroughly blended.
3 - Sift the dry ingredients. Put the nuts and raisins through the coarse cutter of a food chopper/
4 - Combine with the dry ingredients.
5 - Add to the first mixture; alternating with the milk.
6 - Add the grated orange rind and the extraqcts; and beat until blended.
7 - Transfer to a round cake pan rubbed with shortening and lined with waxed paper.
8 - Bake in a slow oven, 350 degrees F. for 1 hour or until the cake is firm in the center. Remove from the pan. Cool and cover with Lady Roosevelt Icing. 9 - Decorate with strips of citron and lavender candies.
