Dutch Fruit Cake
2 cps flour
4 tsp baking powder
3 tbsp sugar
1/2 tsp salt
4 tbsp shortening
3/4 cp milk
2 cps thinly sliced apples
1/2 cp raisins
1/2 cp sugar (additional) 2 tsp cinnamon 1/2 cp chopped peanuts or other nuts(optional
1 - Sift the flour, baking powder, the 3 tbsp sugar, and salt.
2 - Work in the shortening with a spoon until the mixture looks flaky;
then add the egg, beaten and combined with the milk.
3 - Transfer to a shallow oiled pan; cover with rows of apple interspersed with raisins;
and sprinkle with the remaining sugar combined with the cinnamon and nuts, if used.
4 - Bake 30 minutes in a moderate oven, 350 degrees F. or until th apples are soft
and slightly browned and the cake is firm in the center.
5 - Serve warm, with or without whipped cream or evaporated milk, or lemon fruit sauce.
