Raised Prune Cake
1 cp milk
1 tbsp sugar
1 compressed yeast cake
2 tbsp milk (additional)
1 1/2 cps bread flour
1/3 cp shortening
1 cp sugar (additional)
1/2 tsp salt
1 1/3 cp pitted cooked prunes
5 1/2 cps sifted bread flour
Thin boiled icing
1 - Scald the cp of milk; add the sugar and cool until tepid.
2 - Then stir in the yeast, dissolved in the 2 tbsp milk; and add 1 1/2 cps flour.
3 - Beat well and cover; let stand in a warm place until light and spongy, about 2 hours.
4 - Cream together the shortening, sugar, eggs, and salt; and beat into the sponge mixture.
5 - Then beat in the prunes which should be well drained and cut in quarters.
6 - Add the bread flour; transfer to an oiled dripping pan; cover and let rise until double in size.
7 - Bake 45 minutes in a moderately hot oven, 350 to 375 degrees F.
8 - When cool, cover with icing.
