Peach Meringue Cake
1/4 cp shortening
1 cp sugar
1/2 tsp lemon extract
1 2/3 cps cake flour
1 1/2 tsp baking powder
1/8 tsp salt
1/2 cp milk
3 eggs, additional
1/2 cp confectioners' sugar
2 cps well drained chopped canned peaches
1 - Cream the shortening and sugar together; add the egg, well beaten, and the flavoring.
2 - Sift the dry ingredients; and add alternately with the milk to the first mixture.
3 - Transfer to an oiled cake pan, and bake in an oven at 375 degrees F. about 35 minutes.
4 - Separate the 3 eggs; beat the yolks until creamy together with the confectioner's sugar
and the whites until stiff.
5 - Add the peaches to the egg yolk mixture; and fold in the egg whites.
6 - Spread on top of the cake; reduce the heat to 325 degrees F.; and bake the meringue until brown, about 15 minutes.
