Prune Loaf Cake
1/2 cp shortening
1 cp sugar
1 1/2 cps cake flour
1/2 tsp baking powder
1/3 tsp salt
1/2 cp milk
1 tsp baking soda
1 tsp cinnamon
1/2 tsp cloves
1/2 tsp nutmeg
1/4 cp sour milk
1 cp cooked, chopped, pitted prunes
Lady Roosevelt Icing
1 - Cream the shortening; gradually work in the sugar; beat until blended.
2 - Add the eggs, slightly beaten. Sift the dry ingredients and add alternately with the milk to the first mixture.
3 - Add the chopped prunes and beat until well mixed.
4 - Transfer to a well oiled loaf cake pan dusted with flour and bake in a moderate oven, 350 degrees F. for 45
minutes, or until the cake is brown and firmm in the center.
5 - Remove from the pan and cool. Spread with Lady Roosevelt icing.
