One-Egg Raisin Cake
4 tbsp shortening
2/3 cp sugar
1/2 tsp vanilla
1 1/2 cps cake flour
1 1/2 tsp baking powder
1/4 tsp salt
3/4 cp raisins
1/2 cp milk
1 - Cream the shortening. Add the sugar, flavoring and egg, well beaten.
2 - Sift the flour, baking powderand salt. Add the raisins and stir until blended.
3 - Add alternately with the milk to the first mixture.
4 - Transfer to an oiled medium-sized biscuit pan; and sprinkle a few raisins over the top.
5 - Bake in a quick oven, 375 degrees F. for 30 minutes.
