Lemon Layer Cake
1/3 cp shortening
1 cp sugar
1 1/2 cps cake flour
2 tsp baking powder
1/2 tsp salt
1/2 cp milk
1 tsp lemon extract
1 - Cream the shortening; and grandually work in the sugar.
2 - Add the eggs, well beaten; and beat until the mixture is well blended.
3 - ift the dry ingredients together; and add alternately with the milk to the first mixture.
4 - Add the extract; and beat and blend the mixture.
5 - Transfer to 2 well oiled layer cake pans; and bake in a moderate oven, 375 degrees F. for 20 minutes,
or until the cake is firm in the center and brown on top.
6 - Remove from the pans; cool; put together with the lemon filling, and dust with powdered sugar.
