New England Maple Cake
1/2 cp shortening
1/2 cp granulated sugar
1/2 cp maple syrup
1 1/2 cps cake flour
2 tsp baking powder
1/2 tsp salt
1/4 tsp nutmeg
1/2 tsp cinnamon
Maple whipped cream
1/3 cp broken walnut meats
1 - Cream the shortening and sugar; add the egg yolks, beaten and the maple, syrup.
2 - Sift the dry ingredients together and add to the first mixture; beat well.
3 - Then fold in the egg whites, whipped stiff.
4 - Transfer to 2 oiled layer cake pans; and bake in a moderately hot oven, 350 to 375 degrees about 20 minutes.
5 - Cool; and just before serving put together with maple whipped cream.
6 - Sprinkle walnuts over the top.
