3 tbsp butter
1 1/2 cps sifted confectioners' sugar
Pulp 1 1/2 small bananas
1 tbsp lemon juice
1 - Cream the butter until soft; and gradually work in a cup of sifted confectioners' sugar.
2 - Add the banana pulp which has been put through a sieve or potato ricer and mixed with the lemon juice.
3 - When blended stir in the remaining confectioners' sugar, or enough to thicken the icing; and
beat until it is light, yet holds its shape.
