1/4 cp shortening
1 cp sugar
1 tsp lemon extract
1 2/3 cps cake flour
1 1/2 tsp baking powder
1/8 tsp salt
1/2 cp milk
2 egg whites
1 - Cream the shortening, sugar and flavoring together in one operation.
2 - Mix and sift the dry ingredients, and add alternately with the milk to the first mixture.
3 - Last, fold in the egg whites, whipped stiff.
4 - Transfer to small oiled muffin pans; and bake in an oven at 375 degrees F. about 20 minutes.
5 - When cool, cover completely with white icing; and roll while still soft in cocoanut.
