Oatmeal Cookies II
1/2 cp melted shortening
1 cp brown sugar
1 tsp vanilla
1 cp flour
1/4 tsp soda
1 tsp baking powder
1/4 tsp salt
2 cps rolled oats
1 - Combine the egg yolk, shortening, brown sugar, and vanilla and beat well.
2 - Sift together the flour, soda, baking powder and salt.
3 - Add the rolled oats; and combine with the first mixture.
4 - Last, fold in the egg white whipped stiff.
5 - Drop by teaspoonfuls on lightly oiled pans, keeping the cookies 2" apart.
6 - Bake 15 minutes in a hot oven, 375 degrees F.
