Date Tapioca Cream
2 1/2 cps milk
rind 1/4 orange
1/3 cp quick cooking tapioca
1/4 tsp salt
1/3 cp sugar
1/2 cp dates, shreddede
1 - Scald the milk with the orange rind in the top of a double boiler.
2 - Remove the rind; add the tapioca, salt and sugar; and cook and stir over hot water
until the mixture thickens and the tapioca is transparent.
3 - Separate the eggs; and add the yolks which should be well beaten and mixed with 2 tbsp extra milk.
4 - Cook about 2 minutes longer; then cool slightly; and fold in the egg whites, beaten stiff.
5 - Chill; and serve with or without a garnish of extra shredded dates.
