Swedish Strawberry Mould
1/2 cp cornstarch
3/4 cp sugar
1/4 tsp salt
1 cp mashed strawberries
2 cps boiling water
2 tbsp lemon juice
2 egg whites
1 - Combine the cornstarch, sugar, and salt; add the strawberries; and mix until blended.
2 - Transfer to the top of a double boiler; add the water, and cook and stir until the mixture thickens.
3 - Cover and continue cooking for 10 minutes.
4 - Remove from the heat; add the lemon juice and cool slightly.
5 - Fold in the egg whites, whipped stiff and transfer to 1 large or 4 small moulds rinsed with cold water.
6 - hill; unmould; and serve with top cream, or sliced sugared strawberries.
