Baked Caramel Custard
1/2 cp sugar
1/2 cp boiling water
3 1/2 cps scalded milk
1/3 cp sugar (additional)
1/4 tsp salt
1/2 tsp vanilla
1 - Caramelize the half cup of sugar, that is,melt it in a frying pan until the color of maple syrup.
2 - Add the boiling water, and cook until dissolved
3 - Stir into the milk; add the eggs, beaten light with the remaining sugar, salt, and vanilla.
4 - Transfer to a buttered baking dish.
5 - Stand this in a pan of hot water, and bake until firm in the center, about 45 minutes, using
a slow oven, 325 to 350 degrees F.
6 - Serve cold with or without cream.
