Cottage Pudding II
1/3 cp shortening
2/3 cp sugar
1 cp milk
1/2 tsp vanilla
2 cps flour
2 1/2 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
1 - Cream the shortening, and gradually work in the sugar.
2 - Add the egg, slightly beaten, the milk, and vanilla and beat until the mixture is blended.
3 - Add the dry ingredients which have been sifted together; and mix until the batter is smooth and free from lumps.
4 - Transfer to one oiled loaf cake pan or to oiled cup cake pans.
5 - Bake in a moderate oven for 25 minutes or until firm in the center and brown on top.
6 - Remove from the pans; and serve while still warm with any fruit or chocolate sauce.
