Fruit Flavored Junket Ice Cream Refrigerator Method
1 cp milk
1 cp heavy Cream
1 package Junket powder(raspberry, orange, or lemon flavor
few grains salt
1/2 tbsp lemon or lime juice
1 - Heat the milk until lukewarm; remove from the range and add the salt and the Jubket powder; stor 1 minute.
2 - Pour into the refrigerator tray, let stand until firm and cool - about 10 minutes; then add the lemon or
lime juice and the cream whipped stiff, stirring it in thoroughly.
3 - Place inn the freezing compartment of the refrigerator adjusted to the highest freezing speed.
4 - When thick around the edges, scrape from the sides and bottom of the pan with a wire whisk,
remove to a bowl, beat up the contents thoroughly and return to the refrigerator to finish freezing.
5 - Serve plain or Sunday fashion with any harmonizing fruit sauce, such as canned raspberries, sliced
sugared oranges, or a mixture of sweetened, fresh or canned fruits.
