6 tbsp sugar
2 tbsp cornstarch
3/4 cp sifted cooked apricots
1/2 tbsp lemon juice
few grains salt
2 tbsp butter
1 - Mix the sugar and cornstarch thoroughly.
2 - Heat the apricotsa; add the first mixture, the lemon juice, salt, and butter; and bring to a boil.
3 - Separate the eggs; beat the whites stiff and the yolks lemon colored.
4 - Add the apricot mixture to the egg yolks; fold into the whites.
5 - Pile in a baking dish; surround with hot water; and bake 30 minutes in a hot oven.
6 - Serve at once.
