Old-Fashioned Apple Dumpling
2 qts chopped apples
2 cps sugar
2 1/2 cps water
1/2 tsp cinnamon
2 cps flour
3 tsp baking powder
1/2 tsp salt
2 tbsp shortening
3/4 cp milk
1 - Combine the apples, sugar, flavoring, and water; and boil until the apples are soft.
2 - Then prepare the dumpling mixture from the remaining ingredients.
3 - Sift together the flour, salt, and baking powder; work in the shortening with the back
and edge of a spoon, and add the milk.
4 - Into an iron or heavy pot put a layer of the apple sauce.
5 - Cover with a layer of the dumpling mixture, rolled to a scant 1/2" in thickness.
6 - Put on more apple sauce, continuing this way until there are 2 or more layers of the dumpling mixture.
7 - The last layer should consist of the dumpling dough.
8 - Cover closely; and steam 1 hour. Serve in old-fashioned style with sweetened cream flavored with
cinnamon, or with hard sauce.
