Frozen Fruit Sherbet
3/4 cp boiling waqter
2 cps sugar
1 tsp granulated gelatin
1 cp sieved canned or fresh peaches
1 cp canned or stewed dried apricots
1 cp sieved canned or fresh stewed plums
1/3 cp lemon juice
1/2 cp orange juice
1 - Boil the sugar and water together 10 minutes; and add the gelatin first softened in cold water.
2 - Cool; add the fruits; and transfer to the freezing trays of a mechanical refrigerator.
3 - Freeze the time advocated by the make of refrigerator.
4 - At the end of the first half hour, take out the mixture and beat itm thoroughly.
5 - Return it to the freezing trays; and continue freezing, stirring occasionally with a wire whisk
until the sherbet is firm enough to serve.
