Glace' Apricot Roll
2 1/2 cps flour
4 tsp baking powder
1/2 tsp salt
1 tbsp sugar
4 tbsp shortening
3/4 cp milk
2 cps chopped canned or stewed apricots
1/4 cp sugar (additional)
1/2 tsp cinnamon
2 tbsp butter
1 cp apricot juice, extra
1 - Sift together the flour, baking powder, salt and the tbsp of sugar; and work in the shortening using the back and edge of a spoon.
2 - When the mixture is flaky, stir in the milk.
3 - Transfer to a lightly floured board; and pat into rectangular shape 1/2" thick.
4 - Spread to within an inch of the edge with the apricots; dust with the remaining sugar and cinnamon; and dot with the butter.
5 - Roll up gently and pinch the edges together.
6 - Place fold side down on an oiled baking pan; and bake 30 minutes at 375 degrees F., basting with the apricot juice.
7 - Serve with butter or lemon sauce.
