Frozen Banana Custard
3 tbsp sugar
1 tbsp flour
1 cp milk
few grains salt
1 tsp lemon extract
1 cp mashed banana pulp
1/2 cp heavy cream or evaporated milk
1 - Beat the egg until creamy; and gradually beat in the sugar and flour.
2 - Add the milk, and transfer to the topof a double boiler.
3 - Cook and stir over hot water until the mixture thickens.
4 - Remove from the heat; cool and add the salt, lemon extract and banana pulp.
5 - Fold in the cream or evaporated milk, whipped stiff; and transfer to the freezing tray of a mechanical refrigerator.
6 - Freeze for about 3 hours, or until the custard is firm enough to serve; beating thoroughly at the end of the first 30
minutes and at the end of an hour.
