Baked Cherry Pudding
3/4 cp chopped stoned cherries
1 cp sugar
1/4 cp shortening
3/4 cp sugar (additional)
1/2 tsp orange extract
1 3/4 cp flour
2 1/2 tsp baking powder
1/2 tsp salt
1/2 cp milk
1 - Mix the cherries and the cup of sugar; and place in 8 oiled muffin pans.
2 - Make a batter of the remaining ingredients.
3 - Pour this into the muffin pans, filling a little more than half; and bake 35 minutes in a hot oven, 375 degrees F.
4 - To make the batter, cream the shortening with the remaining sugar, eggs and extract.
5 - Sift the flour, baking powder and salt.
6 - Add alternately to the first mixture with the milk.
