Steamed Bread Pudding
4 cps bits stale bread soaked in water and very well drained
1 cp sugar
1/4 cp shortening
1/4 cp halved seeded raisins
1/2 tsp cinnamon
grated rind and juice 1/2 lemon
1 -Cream the sugar and shortening; beat in the egg yolks; add the bread and the remaining ingredients.
2 - Finally fold in the egg whites, beaten stiff.
3 - Put into well oiled mould and steam for 2 hours.
4 - Serve hot with orange juice.
