1 1/4 tbsp granulated gelatin
1/3 cp cold water
1/3 cp boiling water
1 cp sugar
3 tbsp lemon juice
1 cp orange juice and pulp
3 egg whites
1 1/2 cps heavy cream
sections of 3 large oranges
1 - Soften the gelatin in the cold water; and dissolve in the boiling water.
2 - Add the sugar, lemon juice, orange juice and pulp; and chill until it begins to congeal.
3 - Then beat with a wire shisk until frothy.
4 - AQdd the egg whites, whipped stiff; and fold in the cream, beaten until thick.
5 - Line a mould with the sections of oranges; turn in the mixture; and chill.
6 - Unmould; and serve garnished with sugared orange sections or whipped cream.
