Strawberry Cream Cake
2 layers sponge cake
1/2 cp crushed strawberries and juice
2 tsp granulated gelatin
1 cp whipped cream
1 cp whipped cream (additional)
1 cp whole strawberries
1 - Put the cake layers together with a strawberry charlotte mixture which is made as follows;
2 - Soften the gelatin in cold water; melt over steam; and add to the crushed strawberries and their juice.
3 - Stir into the first cup of whipped cream.
4 - Let this filling stand until it has begun to stiffen before spreading it on the bottom layer of cake.
5 - Place it in the refrigerator until almost firm before setting the 2nd layer in place.
6 - Just before serving, top with the remaining whipped cream, sweetened, and decorate with the
whole strawberries rolled in granulated sugar.
