tea of good grade
1 - To be good, tea should be quickly made and of sufficient strength to have flavor.
2 - First scald an earthenware teapot with boiling water.
3 - Measure 1 shaken off teaspoon of tea for each person to be served.
4 - Pour in 3/4 of a half pint measuring cupful of boiling water for each teaspoonful that has been used.
5 - Cover closely; set pot in a warm place or in a pan of boiling water; and allow the beverage to infuse fro 3 to 5 minutes.
6 - Pour at once from the leaves into another pot; and serve with cream, milk or lemon and sugar, if desired.
