6 lbs apples
3 qts cider
3 lbs sugar
1 1/2 tsp ground cloves
1 tsp ground allspice
1 1/2 tswp cinnamon
1 - Wash and slice the apples. Do not remove the skins or seeds.
2 - Add the cider; and cook rapidly until mushy.
3 - Rub through a coarse sieve; then add the sugar and spice; and simmer very slowly until thick, stirring frequently.
4 - Transfer to steril\ized jars, filling them full to overflowing; and seal with sterilized rubbers and caps.
