Turkish Orange Delight
2 tbsp gelatin
1 1/2 cps cold water
4 cps sugar
1/2 cp strained orange juice
1/3 cp strained lemon juice
grated rind 1 orange
1 cp finely chopped nut meats
1 cp mixed, chopped candied fruit
1 - Soften the gelatin in the cold water; add the sugar, and boil for 10 moinutes.
2 - Add the strained orange and lemon juice and the orange rind and cook 10 minutes longer.
3 - Transfer to an oiled shallow pan; and place in the refrigerator for 2 hours to slightly congeal.
4 - Then fold in the nuts and fruit; and continue chilling.
5 - Cut in squares and roll in confectioners' sugar sifted with 1/3 its quantity of cornstarch.
